A note on stability in food matrices of Salmonella enterica serovar Enteritidis-controlling bacteriophages Electron. J. Biotechnol.

Background Lytic bacteriophages are bacterial viruses that upon infection kill their host cells and therefore have re-emerged as biological control agents of bacterial pathogens, particularly in the field of food related infections. Here, we investigated the stability in different food matrices of five phage isolates capable of controlling the foodborne pathogen Salmonella enterica serovar Enteritidis (SE). Results We found that two phages, originally isolated from food sources, were up to 5 logs more stable than three phages isolated from sewage, in ten food matrices (fresh and processed) at both 4°C and 18°C. Infection of Caenorhabditis elegans by Salmonella typhi Ty2 Electron. J. Biotechnol.

Several serovars of Salmonella infect and kill the nematode C. elegans. However, here we report that Salmonella typhi Ty2, a representative strain of this human pathogen, readily infects the intestinal lining of C. elegans without significantly affecting its viability. Our observation suggests extending the use of the C. elegans model system for the study of host parasite relationships, to address problems concerning the biology of S. typhi.

Phage therapy has been used in the past as an alternative therapy against bacterial pathogens. However, phage-resistant bacterial strains can emerge. Some studies show that these phage-resistant strains are avirulent. In this study, we report that phage-resistant strains of Salmonella enterica serovar Enteritidis (hereafter S. Enteritidis) were avirulent in the Caenorhabditis elegans animal model. We isolated phage-resistant strains of S. Enteritidis ATCC 13076 by using three lytic phages (f2αSE, f3αSE and f18αSE). Selection of polyvalent bacteriophages infecting Salmonella entérica serovar Choleraesuis Electron. J. Biotechnol.

Background: Ideally, bacteriophages of pathogenic bacterial hosts should be polyvalent to be able to replicate in an alternative nonpathogenic bacterium. Thus, accidental infection by the original host can be avoided when bacteriophage lysates are used in biocontrol protocols. Results: From 15 wastewater samples, collected at different sites in the V Region in Chile, we selected three bacteriophages (FC, FP, and FQ) capable of productively infecting Salmonella enterica serovar Choleraesuis. Stability inside hen eggs of a Salmonella enterica serovar Enteritidis bacteriophage Electron. J. Biotechnol.

Background: Bacteriophages are viruses that infect bacteria and therefore are widespread in nature. Those that lyse the pathogen Salmonella enterica serovar Enteritidis (SE) should be expected in niches in which this bacterium thrives, among others the avian egg. Furthermore, bacteriophages could remain viable in this milieu. Results: Upon artificially infecting hen eggs with the SE bacteriophage f18 we found that the bacteriophage titer remains stable at least for up to 144 hrs post-infection , both in yolk and albumen at 25ºC. Conclusion: Bacteriophage f18 withstands the physico-chemical conditions of the egg inner milieu and could be considered for SE-controlling measures in the poultry industry.
